Culinary Arts I is a focused CTE elective that provides a foundation for a career in the food service industry. This course is designed for students who want to explore basic cooking techniques, general nutritional concepts and feel more comfortable in the kitchen. Culinary highlights include: safety and sanitation, basic knife skills, a variety of quick breads and yeast breads, grain dishes, pizza, cookies, simple desserts, beef and poultry dishes among others.

This CTE course is designed for students who want to develop skills working with recipes, meal planning, and food preparation. Students will have the opportunity to explore full utilization of foods and complete meal planning through a variety of advanced cooking techniques. Students will learn how to balance time management in order to meet time restraints, and explore a variety of resources available to them as a consumer making choices about the food they eat and prepare. *Labs will accommodate diets such as Vegetarian, Gluten Free, Diabetic, Lactose Free, Cholesterol Free, etc. Every effort will be made to accommodate non-inhalation of food allergies provided the student has notified the teacher the first week of the trimester.

This CTE course is designed for students who want to develop professional culinary skills working with large batch recipes, meal planning, and preparation. Students will have the opportunity to plan and prepare grab and go meals, baked goods, and products for the OCHS Bistro, Pete’s Place, and catering projects for school and community events. *Labs will accommodate diets such as Vegetarian, Gluten Free, Diabetic, Lactose Free, Cholesterol Free, etc. Every effort will be made to accommodate non-inhalation of food allergies provided the student has notified the teacher the first week of the trimester.

Will you be getting a job soon? Why not gain some experience in food service before applying and come work in the OCHS Bistro. The Bistro is a fun and fast paced work environment that allows students to make smoothies, espresso drinks, and blended drinks. Students who complete this class will gain experience to put on their resume, as well as a formal letter of recommendation, payment of one free drink a day and a whole lot of fun!

Managing day-to-day operations of the Bistro. This may include: onboarding new staff and baristas, training students on drink preparation and proper use of coffee equipment. Student managers will help increase profitability, boost customer engagement and turn bistro into a favorite local spot.
